Avolantro-Lime Vinaigrette

I have had several avocado-y, cilantro-y, lime-y salad dressings at various Mexican restaurants.  One in particular though, I love!  Actually, I’m obsessed with it.  I’d pretty much eat it on anything.  It’s from La Sirena Grill & it is bomb.com.  So I attempted a kind of copy-cat recipe.  I say kind of because it’s not quite the same, but pretty darn close, if I do say so myself.  It is delicious though, so I am quite please to have it in large quantities at my disposal.  Even though it has no dairy in it, it’s so creamy & thick because of the avocado.  Use it for a salad or even on tacos :)

The Brass Halo_Avolantro-Lime Vinaigrette 5

Ingredients:
  • 1/2 cup extra-virgin olive oil
  • 1 cup cilantro
  • a pinch of minced garlic
  • juice of 1 orange
  • juice of 3 limes
  • 1 avocado
  • salt & pepper to taste (about 1/2 tsp of each)

Combine all ingredients into a blender or food processor

Puree until smooth

    This sounds fantastic! How long does it last in the fridge? And does it get brown like a cut avocado?

      It is so yummy :) I had it for 5 days (before I used it all) & it was perfect, I’d imagine probably a week or so though. Also, it does not turn brown at all!! The acid in the lime is the reason for this (the same way you can keep apple slices from turning brown with some lemon juice).

    How much total does this make? I’m trying to work out the nutritionals for dieting purposes.

      Hi Nicole, it made about 1 1/2 cups of dressing (depending on how large or small the avocado, lime & orange are)

    how long will the dressing keep if i make the whole lot? just because it’s avo & all…

      I haven’t kept it for more than a week… since it’s homemade dressing, it doesn’t keep as long as store-bought. But because of the lime juice, the avocado doesn’t turn brown like avocados normally do. Hope you enjoy it!!
