I have had several avocado-y, cilantro-y, lime-y salad dressings at various Mexican restaurants. One in particular though, I love! Actually, I’m obsessed with it. I’d pretty much eat it on anything. It’s from La Sirena Grill & it is bomb.com. So I attempted a kind of copy-cat recipe. I say kind of because it’s not quite the same, but pretty darn close, if I do say so myself. It is delicious though, so I am quite please to have it in large quantities at my disposal. Even though it has no dairy in it, it’s so creamy & thick because of the avocado. Use it for a salad or even on tacos :)
Ingredients:
- 1/2 cup extra-virgin olive oil
- 1 cup cilantro
- a pinch of minced garlic
- juice of 1 orange
- juice of 3 limes
- 1 avocado
- salt & pepper to taste (about 1/2 tsp of each)
Combine all ingredients into a blender or food processor
Puree until smooth















This sounds fantastic! How long does it last in the fridge? And does it get brown like a cut avocado?
It is so yummy :) I had it for 5 days (before I used it all) & it was perfect, I’d imagine probably a week or so though. Also, it does not turn brown at all!! The acid in the lime is the reason for this (the same way you can keep apple slices from turning brown with some lemon juice).

If you put the avocado pit in the dressing this will also keep it from turning brown!
